Avocado & Prawn Salad Recipe

1/2 medium Avocado
100g prawns
Mixed baby leaf salad
Tomato
Cucumber
Diced mixed peppers
Lemon
50ml mayonnaise

Using a potato peeler take the rind off the lemon, without getting any of the pith, finely slice with a sharp knife and mix into the mayonnaise, then squeeze half of the lemon in and mix well.

Into a bowl place the baby leaf salad, with the tomato, cucumber, peppers, and any other favourite ingredients. Then peel the avocado and take the large stone out of the centre, thinly slice, and rub with the juice from the other half of the lemon, this will stop it turning brown. Mix the avocado and the prawns into the salad, or arrange on the top

Serve the mayonnaise in a small bowl on the side
