Cherry & Chocolate Shortbread Recipe

Cherry and Chocolate ShortbreadOne of our most popular snacks in the restaurant. Our customers say it’s perfect with a cup of tea.


  • 225g caster sugar
  • 225g butter
  • 225g margarine
  • 700g plain flour
  • 110g cherries
  • 225g chocolate
  • 1⁄2 cap almond essence

Soften the margarine and butter, but not too much and cream them together until nearly white then add the sugar and mix together.

Cut the cherries into quarters, add them to the bowl along with the flour and mix together.

Spread onto a baking tray ensuring the mix is even and level. Bake at 200 degrees (gas mark 6) for 30­-40 mins, until the top is a golden brown colour.

Leave to cool, then melt the chocolate and pour over the shortbread, when nearly set, cut into squares.

This is a great dish to make with the children during the holidays as they can help and get a bit messy with every part of the recipe.
